Love Love Love this!!!!! It makes your house smell incredible. You can use fresh or dried herbs (use less dried herbs) I used dry because that is what I had on hand... You can use boneless chicken breast or tenderloins as well. Use the seasonings of your choice. I serve this with cooked pasta but you can use cooked rice as well. I also serve this with warmed crusty bread to sop up the yummy juices... enjoy

Ingredients

  • 6 - boneless chicken thighs
  • 1/4 cup carrot, chopped
  • 1/2 - onion, chopped
  • 1/2 - green & red pepper chopped
  • 1 - stalk celery, chopped
  • 3-4 - garlic cloves smashed & chopped in half
  • 1 can petite diced tomatoes
  • 1 - small can tomato paste
  • 1 can mushrooms, drained
  • 1 can beef broth
  • 1/4 cup brown sugar
  • 1/4 cup red wine
  • 1 tablespoon worchester sauce
  • - seasonings for chicken (garlic & seasoned salt, dried italian seasoning, pepper
  • - (seasonings for dish, bay leaf, pinch each of red pepper flakes,cinnamon, rosemary, & thyme), italian seasoning, parsley flakes, paprika, salt, garlic & onion powder
  • 2 tablespoons oil
  • - parmesan cheese, cooked rice or pasta and crusty bread

How To Make chicken cacciatore

  • Step 1
    In large skillet with deep sides add 2 tbls oil, add green & red pepper, carrot, celery & onion sprinkle with salt & pepper. Cook for 2-3 minutes add garlic cooking for 2-3 minutes. Sprinkle chicken with seasonings on both sides, move vegetables to sides of pan add chicken cooking until brown on both sides. Deglaze pan with wine.
  • Step 2
    In large pyrex measuring container whisk together beef broth & tomato paste. Add seasonings, worchester sauce & brown sugar. Pour over chicken and vegetables, add mushrooms. Bring to a full simmer, put lid on pan and turn down to simmer, stir occasionally and simmer for 1-2 hours or until chicken is falling apart.
  • Step 3
    Durning last 30 minutes of cooking take lid off of chicken mixture to thicken sauce, cook either pasta or rice according to package directions. Serve with a sprinkling of parmesan cheese and if using fresh herbs a sprinkle of chopped fresh parsley. Eat with crusty bread.. enjoy
