Ingredients

  • 1/-4 cup flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 pounds skinned frying chicken pieces
  • 3 tablespoons oil
  • 1 - sliced, small onion
  • 1 - sliced, small green pepper
  • 1 cup sliced, fresh mushrooms or canned
  • 1-3/4 cup (can 15 ounce) whole peeled tomatoes and juice)
  • 1/2 cup water
  • 1 - crushed garlic clove
  • 1/2 teaspoon dried rosemary (optional)
  • 1 teaspoon dried oregano leaves
  • 2/3 cup (6 ounce can) tomato paste

How To Make chicken cacciatore

  • Step 1
    Combine flour, 1/2 tsp. salt and pepper. Coat chicken pieces with flour mixture.
  • Step 2
    Brown chicken in oil in large skillet. Place onion, green pepper and mushroom slices on top of chicken.
  • Step 3
    Cut up tomatoes. Combine tomatoes and juice with remaining ingredients.
  • Step 4
    Pour over chicken and vegetables. Cover, heat to boiling. Reduce heat; boil gently 45 minutes or until chicken is tender.
