In a 14' deep dutch oven, cook bacon over med-high heat,till crisp. Remove with a slotted spoon ,crumble and set aside. Add 4 teaspoons olive oil to oven.Add chicken, brown on all sides. Remove from dutch oven keep warm.
In drippings add onions,peppers, garlic and mushrooms.satue untill tender,(remember to scrap yum yums from bottom of pan,) Abought 5-10 min.
return chicken to pot add all remaining ingredients. add tomato paste. Bring to a boil, Reduce heat to low and simmerfor 40-60 min. Discared bay leaves.
serve over rice or pasta.
