Ingredients
- 6 slices bacon
- 4 teaspoons olive oil
- 3-4 pounds fryer chicken (cut up)
- 2 medium onion,chopped
- 1 medium green bell pepper,chopped
- 4 cloves garlic
- 1 large can diced tomatos
- 1 cup 16 oz can tomato sauce
- 1 cup red wine
- 1 tablespoon salt
- 1/2 teaspoon each cuman,pepper,allspice,and thyme
- 2 - bay leaves
- 10 ounces mushrooms, your choice
- 1/2 bottle dark beer
- 2 cans tomato paste, italian

Step 1In a 14' deep dutch oven, cook bacon over med-high heat,till crisp. Remove with a slotted spoon ,crumble and set aside. Add 4 teaspoons olive oil to oven.Add chicken, brown on all sides. Remove from dutch oven keep warm.

Step 2In drippings add onions,peppers, garlic and mushrooms.satue untill tender,(remember to scrap yum yums from bottom of pan,) Abought 5-10 min.

Step 3return chicken to pot add all remaining ingredients. add tomato paste. Bring to a boil, Reduce heat to low and simmerfor 40-60 min. Discared bay leaves. serve over rice or pasta.
