Ingredients

  • 2 pounds chicken pieces
  • 1 cup onion, sliced
  • 1/2 cup chopped green bell pepper
  • 1/4 cup peanut oil
  • 1 - garlic clove
  • 1 pound plum tomatoes
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon oregano
  • 1/4 teaspoon thyme
  • 3/4 teaspoon salt
  • 1 dash pepper
  • 1/4 pound mushrooms, sliced

How To Make chicken cacciatore

  • Step 1
    Heat oil in large skillet.
  • Step 2
    Add chicken pieces, brown and set aside.
  • Step 3
    Add onion, green pepper and garlic; Cook until onion is tender.
  • Step 4
    Force Italian plum tomatoes through a strainer.
  • Step 5
    Add tomato liquid, parsley, oregano, thyme, salt and pepper to skillet.
  • Step 6
    Cook over low heat for 15 minutes; stir occasionally.
  • Step 7
    Add chicken; cover and cook over low heat 45 minutes.
  • Step 8
    Stir occasionally.
  • Step 9
    Add mushrooms.
  • Step 10
    Cook uncovered 15 minutes or until sauce is desired consistency.
