Ingredients

  • 2 lb
    chicken pieces
  • 1 c
    onion, sliced
  • 1/2 c
    chopped green bell pepper
  • 1/4 c
    peanut oil
  • 1
    garlic clove
  • 1 lb
    plum tomatoes
  • 1 Tbsp
    chopped parsley
  • 1/2 tsp
    oregano
  • 1/4 tsp
    thyme
  • 3/4 tsp
    salt
  • 1 dash(es)
    pepper
  • 1/4 lb
    mushrooms, sliced

How to Make Chicken Cacciatore

Step-by-Step

  1. Heat oil in large skillet.
  2. Add chicken pieces, brown and set aside.
  3. Add onion, green pepper and garlic; Cook until onion is tender.
  4. Force Italian plum tomatoes through a strainer.
  5. Add tomato liquid, parsley, oregano, thyme, salt and pepper to skillet.
  6. Cook over low heat for 15 minutes; stir occasionally.
  7. Add chicken; cover and cook over low heat 45 minutes.
  8. Stir occasionally.
  9. Add mushrooms.
  10. Cook uncovered 15 minutes or until sauce is desired consistency.
