Ingredients
- 2 pounds chicken pieces
- 1 cup onion, sliced
- 1/2 cup chopped green bell pepper
- 1/4 cup peanut oil
- 1 - garlic clove
- 1 pound plum tomatoes
- 1 tablespoon chopped parsley
- 1/2 teaspoon oregano
- 1/4 teaspoon thyme
- 3/4 teaspoon salt
- 1 dash pepper
- 1/4 pound mushrooms, sliced
How To Make chicken cacciatore

Step 1Heat oil in large skillet.

Step 2Add chicken pieces, brown and set aside.

Step 3Add onion, green pepper and garlic; Cook until onion is tender.

Step 4Force Italian plum tomatoes through a strainer.

Step 5Add tomato liquid, parsley, oregano, thyme, salt and pepper to skillet.

Step 6Cook over low heat for 15 minutes; stir occasionally.

Step 7Add chicken; cover and cook over low heat 45 minutes.

Step 8Stir occasionally.

Step 9Add mushrooms.

Step 10Cook uncovered 15 minutes or until sauce is desired consistency.
