    boneless skinless chicken thighs
  • 1/2 c
    chopped red onion
  • 1 1/2 c
    frozen corn thawed
  • 1 tsp
    each mexican oregano, dried onions, cumin, garlic powder and salt
  • 2 tsp
    chili powder
  • ·
    juice of 1 lime
  • 1 Tbsp
  • 2 c
    cooked rice
  • ·
    cotija cheese
  • ·
  • 1 c
    shredded cheddar cheese
  • 1/2 c
    prepared salsa

How to Make Chicken Burrito Plate


  1. Cut the chicken into cubes. Mix the oil, cumin, oregano, dried onions, garlic powder and chili powder together. Add the chicken pieces and marinate at least 5 hours or overnight.
  2. Cook the chicken on a grill or in a frying pan until done. Mix the corn, red onion and lime juice together.
  3. Place the rice on a plate. Top with cheddar cheese then chicken pieces. Then corn mixture. Top with salsa, then Cotija cheese and a dollup of crema
