Ingredients
- 4 boneless skinless chicken thighs
- 1/2 cup chopped red onion
- 1 1/2 cups frozen corn thawed
- 1 teaspoon each mexican oregano, dried onions, cumin, garlic powder and salt
- 2 teaspoons chili powder
- juice of 1 lime
- 1 tablespoon oil
- 2 cups cooked rice
- cotija cheese
- crema
- 1 cup shredded cheddar cheese
- 1/2 cup prepared salsa
How To Make chicken burrito plate

Step 1Cut the chicken into cubes. Mix the oil, cumin, oregano, dried onions, garlic powder and chili powder together. Add the chicken pieces and marinate at least 5 hours or overnight.

Step 2Cook the chicken on a grill or in a frying pan until done. Mix the corn, red onion and lime juice together.

Step 3Place the rice on a plate. Top with cheddar cheese then chicken pieces. Then corn mixture. Top with salsa, then Cotija cheese and a dollup of crema
