Ingredients

  • 3 cups cooked rice
  • 3 cups broccoli florets, steamed
  • 2 cups cooked chicken, diced
  • 1 can low fat cream of chicken soup
  • 1 cup plain, nonfat yogurt
  • 1 teaspoon curry powder
  • 1 cup shredded low fat cheddar cheese

How To Make chicken broccoli rice

  • Step 1
    Preheat oven to 350 degrees, layer rice, broccoli, then chicken in a shallow 2-quart casserole dish.
  • Step 2
    Combine soup, yogurt and curry; spread mixture evenly over chicken.
  • Step 3
    Top with cheese and bake 35-45 minutes until casserole bubbles.
  • Step 4
    Add cheese and bake until it melts.
