chicken broccoli casserole

This is one of my favorite comfort foods. This rich casserole can be made ahead. It is topped with a crunchy, cheesy topping; frozen broccoli and precooked chicken make it easy.

Ingredients

  • 2 10 ounces broccoli, frozen or 4 cups fresh
  • 6 cups chicken, cooked, shredded
  • 2 103/4 ounces cream of mushroom soup, undiluted
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons lemon juice
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup dry white wine
  • 1/2 cup parmesan cheese
  • 1/2 cup bread crumbs
  • 2 tablespoons butter, melted

How To Make chicken broccoli casserole

  • Step 1
    In a medium bowl, combine the soup, mayonnaise, sour cream, cheddar cheese, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well.
  • Step 2
    Place the mixture into an 11 by 7-inch casserole dish. Pat down to even and smooth the mixture. Combine the Parmesan cheese, bread crumbs and butter and sprinkle over the top.
  • Step 3
    Bake at 350 degrees for about 30 to 45 minutes until bubbly and browned. Serve with white rice and a salad.
