chicken, broccoli and noodles in peanut sauce

Trying to use up some leftover rotisserie chicken and combined a few different recipes.

Ingredients

  • 1 cup rotisserie chicken, shredded (about 6 oz)
  • 1 small broccoli, bunch (rinsed and cut into bite-sized pieces)
  • 4 ounces noodles (ramen, pad-thai, udon, etc)
  • PEANUT SAUCE
  • 1/2 cup chicken broth (I used bouillon w/water)
  • 2 tablespoons peanut butter, creamy or chunky
  • 1 teaspoon Sriracha chili sauce or equivalent
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1/2 tablespoon grated ginger (I used ginger from a tube)
  • 1 teaspoon garlic, minced
  • GARNISHES - CHOOSE ALL, SOME OR NONE
  • 1-2 green onion, chopped
  • 2 tablespoons cilantro, or to taste
  • 2 tablespoons chopped peanuts
  • 1 tablespoon sesame seeds
  • 2 - wedges of lime

How To Make chicken, broccoli and noodles in peanut sauce

  • Step 1
    Make sure the chicken is shredded or cut into bite-sized chunks. Set aside
  • Step 2
    Cook noodles according to package directions and add rinsed broccoli to the cooking pasta for the last couple of minutes until crisp-tender. Drain and set aside the noodles and broccoli.
  • Step 3
    Make the peanut sauce by combining all sauce ingredients in a small saucepan. Simmer until the sauce is smooth and creamy.
  • Step 4
    Heat a drizzle of oil in a wok or large pan, then add chicken and season with a little salt and pepper. Stir fry until warmed.
  • Step 5
    Add broccoli, noodles, and peanut sauce to the chicken. Stir together until the peanut sauce coats everything.
  • Step 6
    Serve and garnish with desired items.
