chicken breasts with tomato & garlic

Ingredients

  • 2 tablespoons olive oil
  • 3 cups tomatoes, peeled, seeded and chopped
  • 4 chicken breasts, boneless and skinless
  • 1 bay leaf
  • 4 minced garlic cloves
  • 1 teaspoon thyme
  • 1/2 cup finely chopped onion
  • salt and freshly ground pepper
  • 1/2 cup dry white wine

How To Make chicken breasts with tomato & garlic

  • Step 1
    Salt and pepper chicken.
  • Step 2
    Saute in oil for 3 to 4 minutes on each side.
  • Step 3
    Add garlic, onions, wine, tomatoes, bay leaf and thyme (if you don\'t like thyme, use rosemary or basil).
  • Step 4
    Bring to a boil, reduce heat and simmer for 15 minutes, until chicken is done.
  • Step 5
    Discard bay leaf before serving.
