Ingredients

  • 2 Tbsp
    olive oil
  • 3 c
    tomatoes, peeled, seeded and chopped
  • 4
    chicken breasts, boneless and skinless
  • 1
    bay leaf
  • 4
    minced garlic cloves
  • 1 tsp
    thyme
  • 1/2 c
    finely chopped onion
  • ·
    salt and freshly ground pepper
  • 1/2 c
    dry white wine

How to Make Chicken Breasts with Tomato & Garlic

Step-by-Step

  1. Salt and pepper chicken.
  2. Saute in oil for 3 to 4 minutes on each side.
  3. Add garlic, onions, wine, tomatoes, bay leaf and thyme (if you don't like thyme, use rosemary or basil).
  4. Bring to a boil, reduce heat and simmer for 15 minutes, until chicken is done.
  5. Discard bay leaf before serving.
