This dish was given to me by my daughter's ex-mother-in-law who was a wonderful cook. She formerly entertained a lot and this was one of her guests' favorite requests.

Ingredients

  • 6 - 8 - chicken breasts (boneless and skinless)
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 cup chicken broth
  • 1 cup half and half (do not substitute)
  • 3/4 cup pepperidge farm stuffing
  • 4 tablespoons butter, melted
  • - salt and pepper to taste
  • - swiss cheese
  • - oregano (sprinkled on chicken)

How To Make chicken breasts with swiss cheese

  • Step 1
    Arrange chicken breasts in 2 qt. oblong baking dish (or a larger one depending on how many breasts you have). Melt the first 4 tablespoons of butter in saucepan with 4 tablespoons of flour; add the chicken broth and Half and Half. Stir well to get all lumps out; cook over medium heat until thick and bubbly (stirring constantly). Sprinkle breasts with salt and pepper and oregano. Then pour all the sauce over breasts. Bake at 325 degrees for 50 minutes. Take out and lay sliced swiss cheese on each breast; sprinkle the dressing (3/4 cup that has been mixed with the second 4 tablespoons of butter); over the breasts; bake another 15 minutes. ENJOY!
