Ingredients

  • 1/4 cup dijon mustard
  • 2 tablespoons honey
  • 1 teaspoon brown sugar
  • 2 tablespoons butter, room temperature
  • - freshly ground pepper to taste
  • 4-6 - chicken breast halves brined

How To Make chicken breasts with honey mustard glaze

  • Step 1
    Combine the mustard, honey, and brown sugar in a small bowl and set aside.
  • Step 2
    Mash the butter with the pepper and spread under the skin of the chicken breasts.
  • Step 3
    Place on a wire rack in a large roasting pan and bake in preheated 425 (220C).
  • Step 4
    Cook for 15 minutes and add 1/2 cup (125 ml) water to the roasting pan to prevent smoking.
  • Step 5
    Brush the chicken breasts with the mustard mixture and continue cooking until the internal temperature of the chicken reads 160 F (70C) on an instant-read thermometer, 20 to 30 minutes.
