Chicken breast stuffed with Spinach

9 oz
of frozen spinach thawed & squeezed to drain
1/2 c
finely chopped onion saute
1/2 c
shredded mozzarella cheese
boneless skinless chicken breasts pounded
1 tsp
granulated garlic
1 tsp
salt and pepper to taste
3 Tbsp
parmesan cheese
mixing bowl of egg wash using 2 eggs 3 tbsp mayo and 3 tbsp of honey
1 mixing bowl of flour
mixing bowl of panko or bread crumbs


1Place the chicken on a cutting board, pound both sides then do it again that will break the membrains in the chicken, and it will make it look bigger Salt and pepper the chicken.Take the spinach and drain it well. Them mix the spinach with the onions. Now add the cheeses and the spices. fold in the top and the bottom to the center and fold the sides to cover the spinach. Use party picks or tooth picks to hold it together. Please do no use Tooth picks that were used on your teeth. Here is a trick. Place the chicken in the freezer until its firm, but not frozen.
Put the chicken in the flour.Be sure to flour all over the chicken. Now place the chicken in the egg wash. Be sure the wash covers the chicken. Now roll the chicken in the bread crumbs. I use Panko..Here comes a second trick, Drop the chicken in the deep fryer until the chicken is a light golden brown.Place the chicken on a rack with a tray under it. and bake at 350 degreese until its a nice golden brown. The greese will drop off the chicken in to the pan. Be sure to remove the party pick be for serving. Enjoy.
