Ingredients
- 1 tablespoon olive oil
- 1 clove garlic crushed
- 1/2 teaspoon crushed red pepper
- 1 tablespoon chopped fresh basil or 1/4 t dried
- 1 - 3" strip lemon peel
- 1 can 16 oz tomatoes, undrained
- 1/2 teaspoon sugar
- 1 tablespoon red wine vinegar
- 1/4 teaspoon salt
- 1 tablespoon chopped parsley
- 2 - whole chicken breast, boneless skinless halved
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 tablespoon chopped parsley
How To Make chicken breast in hot tomato vinaigrette

Step 1In medium saucepan heat olive oil over medium heat. Add garlic, red pepper,basil, cook 1 minute. Add lemon peel, tomatoes, and sugar, breaking up tomatoes. simmer 20 minutes. Remove from heat. Stir in remaining ingredients. Remove lemon peel and set vinaigrette aside.

Step 2Place chicken between 2 sheets of waxed paper; pound to 1/4"-1/2". In large skillet heat olive oil and butter over medium heat. Add half chicken. Cook 3 minutes each side. Keep warm in 200 degree oven. Cook remaining chicken in same manner. Remove and keep warm. Add tomato vinaigrette to skillet, heat one minute stirring constantly. Pour over chicken. Sprinkle with parseley, optional
