Ingredients

  • 4
    chicken breast halves
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper
  • 2 Tbsp
    olive oil, divided
  • 2 Tbsp
    butter, divided
  • 3 Tbsp
    chopped green onions
  • ·
    juice of 1 lime
  • 2 Tbsp
    brandy (optional)
  • 3 Tbsp
    chopped parsley
  • 2 tsp
    dijon mustard
  • 1/4 c
    chicken broth

How to Make Chicken Breast Diane

Step-by-Step

  1. Place Chicken breast halves between sheets of waxed paper or in a plastic bag. Pound slightly with a mallet. Sprinkle with salt and pepper.
  2. Heat 1 Tablespoon each of oil and butter in large skillet.
  3. Cook chicken over high heat for 3 minutes on each side. Don't cook longer or they will be overcooked and dry. Transfer to warm serving platter.
  4. Add onions, lime juice and brandy, if used, parsley and mustard to pan. Cook 15 seconds, whisking constantly.
  5. Whisk in broth. Stir until sauce is smooth. Whisk in remaining Tablespoons of butter and oil.
  6. Pour sauce over chicken. Serve immediately.
