Ingredients

chicken breast halves
1/2 tsp
salt
1/4 tsp
pepper
2 Tbsp
olive oil, divided
2 Tbsp
butter, divided
3 Tbsp
chopped green onions
juice of 1 lime
2 Tbsp
brandy (optional)
3 Tbsp
chopped parsley
2 tsp
dijon mustard
1/4 c
chicken broth

How to Make Chicken Breast Diane

Step-by-Step

  • 1Place Chicken breast halves between sheets of waxed paper or in a plastic bag. Pound slightly with a mallet. Sprinkle with salt and pepper.
  • 2Heat 1 Tablespoon each of oil and butter in large skillet.
  • 3Cook chicken over high heat for 3 minutes on each side. Don't cook longer or they will be overcooked and dry. Transfer to warm serving platter.
  • 4Add onions, lime juice and brandy, if used, parsley and mustard to pan. Cook 15 seconds, whisking constantly.
  • 5Whisk in broth. Stir until sauce is smooth. Whisk in remaining Tablespoons of butter and oil.
  • 6Pour sauce over chicken. Serve immediately.
