Ingredients
- 4 - servings boned chicken parts cut in 2 inch pieces
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 ounces sliced mushrooms
- 2 tablespoons minced shallots
- 2 tablespoons sherry wine
- 1/4 cup brown gravy mix
- 1/2 cup chicken broth
- 4 - slices provolone cheese
- 1/4 cup parmesan cheese
- - roux to thicken (equal parts flour & margarine)
How To Make chicken bolognese

Step 1In a saute pan simmer shallots . Add the chicken parts & the stock, wine, butter, & brown gravy. Simmer at low heat until chicken is cooked. Add the mushrooms. Remove the chicken from pan & keep warm. Add roux to thicken the sauce. Place the chicken on a plate & top with provolone cheese. Add sauce & top with parmesan cheese
