chicken & black beans
(1 RATING)
I had 2 pieces of chicken and a bag of dried black beans to make dinner with. I made it spicy but you can omit the peppers if you would like. This a great dish for the Crockpot!

How To Make chicken & black beans
-
Step 1Place chicken in a Lg stock pot. Add water, bay leaf, Thyme, Sage, Chicken Seasoning, Cumin, and pepper. Cook for 1 hour on Medium heat.
-
Step 2Remove chicken and set aside to cool. Reserving the liquid.
-
Step 3Pour reserved liquid through a fine mesh wire strainer, to remove any bones pieces that may have become dislodged. Return liquid and the bay leaf to stock pot.
-
Step 4Add rinsed beans, onion, and garlic to the stock pot. Cook covered on Medium for 2 hrs. Checking periodically to make sure there is enough water. Add 2 cups, if needed, at a time.
-
Step 5At this point add the stewed tomatoes, corn, jalapeno peppers, and salt. Continue to cook until beans are soft.
-
Step 6Serve with cornbread or tortillas.
-
Step 7This a wonderful dish for the crockpot too. Just dump it all in, set on high, let cook at least 8 hrs, remove the chicken to shred when you get home. Walla you got dinner.
