I had 2 pieces of chicken and a bag of dried black beans to make dinner with. I made it spicy but you can omit the peppers if you would like. This a great dish for the Crockpot!

Ingredients

  • 2 - chicken quarters
  • 1 pound dry black beans
  • 6 quarts water
  • 1 - bay leaf
  • 1/2 teaspoon thyme, dried
  • 1/4 teaspoon sage, dried
  • 1 tablespoon chicken seasoning
  • 2 tablespoons cumin
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 can stewed tomatoes
  • 1 package frozen corn
  • 2 - jalapeno peppers
  • 1/2 teaspoon pepper
  • - salt, to taste

How To Make chicken & black beans

  • Step 1
    Place chicken in a Lg stock pot. Add water, bay leaf, Thyme, Sage, Chicken Seasoning, Cumin, and pepper. Cook for 1 hour on Medium heat.
  • Step 2
    Remove chicken and set aside to cool. Reserving the liquid.
  • Step 3
    Pour reserved liquid through a fine mesh wire strainer, to remove any bones pieces that may have become dislodged. Return liquid and the bay leaf to stock pot.
  • Step 4
    Add rinsed beans, onion, and garlic to the stock pot. Cook covered on Medium for 2 hrs. Checking periodically to make sure there is enough water. Add 2 cups, if needed, at a time.
  • Step 5
    At this point add the stewed tomatoes, corn, jalapeno peppers, and salt. Continue to cook until beans are soft.
  • Step 6
    Serve with cornbread or tortillas.
  • Step 7
    This a wonderful dish for the crockpot too. Just dump it all in, set on high, let cook at least 8 hrs, remove the chicken to shred when you get home. Walla you got dinner.
