Ingredients
- 3 boneless chicken thighs cubed
- 3 tablespoons balti seasoning
- 2 teaspoons garam masala
- 3 tablespoons water
- 1/2 cup sliced mushrooms
- 1 cup cauliflower florets thinly sliced
- 1 medium onion diced
- 2 tablespoons veg. oil
- 32 ounces can peeled tomatoes crushed with your hands.
- 3 tablespoons brown sugar
- 2 tablespoons lime juice
- 1/3 cup sliced almonds crushed in food processor
- 1 cup greek plain yogurt room temp
- salt to taste
- 1/4 cup fresh cilantro chopped
- basmati rice and naan for serving
How To Make chicken balti

Step 1Mix the Balti seasoning and Garam Masala together with the water and set aside. In a large pot add 1 tbsp of oil. Add the onion, mushrooms, and cauliflower. Stir fry for 5 minutes. Remove vegetable with a slotted spoon and set aside.

Step 2Add the other 1 tbsp oil to the same pan and brown the chicken in batches if needed. Remove with slotted spoon and place with the vegetables.

Step 3Add the tomatoes, brown sugar and Balti seasoning mixture and bring to a boil. Reduce heat to a simmer and add the almonds and the chicken and vegetable mixture. lower the heat to low. Slowly stir in the yogurt and spoonful at a time mixing until well incorporated with each spoonful. Stir in the lime juice and simmer on low for 15 minutes. Taste and adjust for salt.
