Ingredients

  • 3 boneless chicken thighs cubed
  • 3 tablespoons balti seasoning
  • 2 teaspoons garam masala
  • 3 tablespoons water
  • 1/2 cup sliced mushrooms
  • 1 cup cauliflower florets thinly sliced
  • 1 medium onion diced
  • 2 tablespoons veg. oil
  • 32 ounces can peeled tomatoes crushed with your hands.
  • 3 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 1/3 cup sliced almonds crushed in food processor
  • 1 cup greek plain yogurt room temp
  • salt to taste
  • 1/4 cup fresh cilantro chopped
  • basmati rice and naan for serving

How To Make chicken balti

  • Step 1
    Mix the Balti seasoning and Garam Masala together with the water and set aside. In a large pot add 1 tbsp of oil. Add the onion, mushrooms, and cauliflower. Stir fry for 5 minutes. Remove vegetable with a slotted spoon and set aside.
  • Step 2
    Add the other 1 tbsp oil to the same pan and brown the chicken in batches if needed. Remove with slotted spoon and place with the vegetables.
  • Step 3
    Add the tomatoes, brown sugar and Balti seasoning mixture and bring to a boil. Reduce heat to a simmer and add the almonds and the chicken and vegetable mixture. lower the heat to low. Slowly stir in the yogurt and spoonful at a time mixing until well incorporated with each spoonful. Stir in the lime juice and simmer on low for 15 minutes. Taste and adjust for salt.
  • Step 4
    Serve with Basmati rice & Naan and garnish with cilantro
