1whole chicken

12 cwater

3 stalk(s)celery, cut in half

3 smallcarrots

1onion (cut in fourths)

·salt and pepper to taste

4eggs, separated

4lemons, juice only

1 lborzo
How to Make Chicken Avgolemono Soup (Greek) - Steph
- Cook chicken, onion, carrots, celery, salt and pepper in water for 1 1/2 hours. Remove chicken and vegetables from broth. Return stock to boiling and add the Orzo and broken up chicken.
- While Orzo is cooking, beat egg whites until stiff; add yolks and lemon juice. Beat for one minute. When Orzo is cooked, remove from heat. Slowly add one ladle of broth to egg and lemon mixture (so that mixture can temper and not curdle the eggs). Add egg/lemon to Orzo and heat on stove for a few minutes. ENJOY!!!
