Ingredients
- 1 whole chicken
- 3/4 cup soy sauce
- 1 large red onion
- 2 stalks lemongrass
- 1/4 cup sake, or dry sherry
- 6 cloves garlic minced
- 3 tablespoons oil
- 1 liter sprite
- 6 pieces star anise
- 3 tablespoons brown sugar
- juice and zest of 1 lime
How To Make chicken asado

Step 1Place the chicken in a bowl. Cut the onion in half and mince one half and slice the other half. Place the sliced pieces of onion in the cavity of the chicken. Bruise the lemongrass and chop into pieces. Add that to the cavity of the chicken. Pour the soy sauce over the chicken and rub it into the skin. Let the chicken sit for 30 minutes.

Step 2Add oil to a large pan big enough to put the whole chicken in. Add the chicken breast side down and brown on both sides remove from the pan and set aside. Add the minced garlic, and onions and cook until softened. Add the wine and scrap up the bits from the bottom of the pan. Add the chicken back to the pan. Pour in the Sprite. Bring to a boil. Reduce the heat to medium and add the star anise, sugar, and lime juice and zest.

Step 3Simmer covered for 30 minutes. Turn the chicken and simmer another 30 minutes.

Step 4Remove the chicken from the pan. Let rest on cutting board. Strain the broth thru a fine mesh strainer and discard the solids. Let the broth boil and reduce over high heat until reduced. Spoon the sauce over top the chicken.

Step 5If the sauce is too thin you can thicken it with a slurry of cornstarch and water
