    6 tbsp butter
  • ·
    flour for coating
  • ·
    salt and pepper to taste
  • ·
    10 boneless skinless chicken breasts
  • ·
    2 tbsp. butter
  • ·
    2 tbsp. flour
  • ·
    3/4 cup chicken broth
  • ·
    3/4 cup white wine
  • ·
    1/4 cup chopped green onions
  • ·
    1 can mushrooms, 4 oz
  • ·
    1 jar marinated artichoke hearts, 6 oz

How to Make Chicken Artichoke Casserole


  1. Put the 6 tbsp. butter in 9 x 13 inch baking pan. Heat in 375 oven til butter melts. Mix flour for coating, salt and pepper in sealable plastic bag. Add chicken and shake to coat. Remove chicken from bag. Shake to remove excess flour. Dip in melted butter. Put butter side up in baking dish. Bake, covered with foil for 45 to 60 minutes or until cooked through. Heat the 2 tbsp. butter in pan til melted. Stir in 2 Tbsp. flour. Whisk in chicken broth and wine gradually. Cook til thickened, stirring constantly. Add green onions, undrained mushrooms and undrained artichoke hearts. Mix well. Spoon over chicken. Bake covered at 325 for 15 to 20 minutes. Bake uncovered for 10 minutes. Serves 10
