chicken and white bean stew

This stew is so good! I made it recently for a neighbor who had surgery and I had leftovers for my husband and me. I hope you enjoy this.

Ingredients

  • 1 - rotisserie chicken, deboned and skin removed
  • 2 tablespoons extra virgin olive oil
  • 2 cups chopped yellow onion
  • 4 cans cannellini beans, rinsed and drained
  • 8 cups chicken broth
  • 2 cloves garlic, peeled and minced
  • 1 1/2 teaspoons oregano, dried
  • - salt and pepper to taste

How To Make chicken and white bean stew

  • Step 1
    Remove the skin and bones from the chicken. Cut or tear the meat into small pieces and reserve until ready to add to the stew.
  • Step 2
    Heat the olive oil in a 5 1/2 quarter Dutch oven over medium heat. Add the onions and cook 5 minutes. Add the beans and chicken broth and cook for 5 minutes. Turn heat to low. Add the chicken, garlic, and oregano. Simmer uncovered for 20-30 minutes. Season with salt and pepper. Enjoy.
