This stew is so good! I made it recently for a neighbor who had surgery and I had leftovers for my husband and me. I hope you enjoy this.

rotisserie chicken, deboned and skin removed
2 Tbsp
extra virgin olive oil
2 c
chopped yellow onion
4 can(s)
cannellini beans, rinsed and drained
8 c
chicken broth
2 clove
garlic, peeled and minced
1 1/2 tsp
oregano, dried
salt and pepper to taste

How to Make chicken and white bean stew


  • 1Remove the skin and bones from the chicken. Cut or tear the meat into small pieces and reserve until ready to add to the stew.
  • 2Heat the olive oil in a 5 1/2 quarter Dutch oven over medium heat. Add the onions and cook 5 minutes. Add the beans and chicken broth and cook for 5 minutes. Turn heat to low. Add the chicken, garlic, and oregano. Simmer uncovered for 20-30 minutes. Season with salt and pepper. Enjoy.
