chicken and white bean stew

This stew is so good! I made it recently for a neighbor who had surgery and I had leftovers for my husband and me. I hope you enjoy this.

Ingredients
- 1 - rotisserie chicken, deboned and skin removed
- 2 tablespoons extra virgin olive oil
- 2 cups chopped yellow onion
- 4 cans cannellini beans, rinsed and drained
- 8 cups chicken broth
- 2 cloves garlic, peeled and minced
- 1 1/2 teaspoons oregano, dried
- - salt and pepper to taste
How To Make chicken and white bean stew

Step 1Remove the skin and bones from the chicken. Cut or tear the meat into small pieces and reserve until ready to add to the stew.

Step 2Heat the olive oil in a 5 1/2 quarter Dutch oven over medium heat. Add the onions and cook 5 minutes. Add the beans and chicken broth and cook for 5 minutes. Turn heat to low. Add the chicken, garlic, and oregano. Simmer uncovered for 20-30 minutes. Season with salt and pepper. Enjoy.
