Ingredients For macaroni and cheese with chicken and waffles

  • 10
    frozen waffles, thawed and toasted
  • 1/2 c
    grated Parmesan cheese
  • 1 c
    cane syrup, divided
  • 16 oz
    dry penne pasta
  • 3 Tbsp
    margarine, divided
  • 1/2 c
    dark brown sugar
  • 1 Tbsp
    crushed red pepper flakes
  • 1 bag
    frozen (all-white meat) popcorn chicken
  • 1/4 c
    all-purpose flour
  • 2 c
    whole milk
  • 1 c
    half and half
  • 1 c
    shredded colby jack cheese
  • 1 c
    shredded sharp cheddar cheese
  • 1 c
    shredded pepper jack cheese
  • 1 Tbsp
    sea salt mixed with black pepper

How To Make macaroni and cheese with chicken and waffles

    Preheat oven to 375 degrees F.

    Coat the bottom and sides of a 2-quart baking dish with cooking spray.

    Cut the toasted waffles into quarters with kitchen shears. Place in a baking dish, sprinkle with Parmesan cheese, and drizzle with 1/2 cup cane syrup; mix well.

    Heat 2 Tbsp margarine in a medium saucepan over medium-low heat. Add remaining cane syrup, brown sugar and crushed red pepper flakes; whisk well and let it simmer for 3 minutes.

    Remove from heat. Add popcorn chicken and mix together until combined. Set aside.

    Heat remaining margarine in a large saucepan over medium heat. Whisk in flour until combined. Add the milk and half and half; whisk well for 5 minutes until the mixture is creamy.

    Stir in the shredded colby jack, sharp cheddar, and pepper jack cheese and sea salt/black pepper until the cheeses are melted.

    Add the cooked penne pasta and popcorn chicken mixture; mix well and cook for 6 minutes. Remove from heat.

    Pour into a prepared baking dish. Top evenly with the waffle pieces. Cover with aluminum foil.

    Bake for 20 minutes or until the cheeses are bubbly. Remove the aluminum foil. Drizzle with cane syrup.
