chicken and veggie packets

This recipe works well in the oven, in a covered grill or over a campfire! The veggies and chicken steam in their own juices. The best part - it's only 0 (zero) WW points!

Ingredients

  • 8 ounces chicken breast
  • 1/2 cup red pepper, sliced
  • 1 medium shallot, sliced
  • 1/2 cup baby carrots
  • 4 ounces mushrooms, sliced
  • 1 teaspoon italian herbs
  • 1/4 teaspoon garlic powder
  • - salt and pepper to taste

How To Make chicken and veggie packets

  • Step 1
    While partially frozen, slice the breast in half the long way OR pound the breast until it's uniformity thin, then cut into two pieces.
  • Step 2
    Put each piece of chicken in the center of a 12 inch square of heavy duty foil. Sprinkle each with half of Italian herbs. Divide veggies between both packets. Sprinkle on garlic powder, salt and pepper.
  • Step 3
    Close foil packets tightly. Put on baking sheet in 375ºF oven for half hour. Let sit for 5 minutes before opening.
