Ingredients
- 8 ounces chicken breast
- 1/2 cup red pepper, sliced
- 1 medium shallot, sliced
- 1/2 cup baby carrots
- 4 ounces mushrooms, sliced
- 1 teaspoon italian herbs
- 1/4 teaspoon garlic powder
- - salt and pepper to taste
How To Make chicken and veggie packets

Step 1While partially frozen, slice the breast in half the long way OR pound the breast until it's uniformity thin, then cut into two pieces.

Step 2Put each piece of chicken in the center of a 12 inch square of heavy duty foil. Sprinkle each with half of Italian herbs. Divide veggies between both packets. Sprinkle on garlic powder, salt and pepper.

Step 3Close foil packets tightly. Put on baking sheet in 375ºF oven for half hour. Let sit for 5 minutes before opening.
