Ingredients
- 2 cups sweet potatoes, boiled, peeled and mashed
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/3 cup skimmed evaporated milk
- 1/4 cup chicken broth
- 1/4 cup minced onion
- 8 ounces water chestnuts, drained and sliced
- 10 ounces cream of chicken soup
- 3 cups chicken breasts, cubed
- 3 tablespoons water
How To Make chicken and sweet potatoes

Step 1Preheat oven to 350.

Step 2In a medium size bowl, combine sweet potatoes, brown sugar, cinnamon, nutmeg and milk.

Step 3Spread around the inside edge of a round 10 inch casserole, forming a ring.

Step 4In a medium size non stick skillet, heat broth over low heat.

Step 5Add onion and water chestnuts; cook until tender. Add soup, chicken and 3 tablespoons water; cook over medium heat until hot, stirring occasionally.

Step 6Spoon chicken mixture into center of sweet potato ring in casserole.

Step 7Bake uncovered, 30 minutes or until bubbling.
