Ingredients

  • 1 small chicken, broiler-fryer
  • 1 - celery bunch, sliced
  • 2 cups long grain rice, uncooked
  • 1 pound ham, cubed
  • 1 cup chopped onion
  • 3/4 cup chopped parsley
  • 1 large bay leaf
  • 2 teaspoons salt
  • 1/4 teaspoon hot sauce
  • 3 - garlic cloves
  • 1 pound smoked sausage
  • 4 tablespoons butter
  • 1 cup chopped green bell pepper
  • 6 ounces tomato paste
  • 1/4 teaspoon thyme
  • 1/2 teaspoon pepper
  • 1/4 cup chopped green onion
  • 2 large onions
  • 5 cups chicken broth
  • 1 pound large shrimp,peeled and de-veined

How To Make chicken and sausage jambalaya

  • Step 1
    Put chicken, 1 onion (cut in half), celery and 1 garlic clove in pot.
  • Step 2
    Cover with water.
  • Step 3
    Cook for approximately 1 hour or until chicken is tender.
  • Step 4
    Cook 2 cups of rice in 5 cups chicken broth (20 to 25 minutes or until liquid is absorbed).
  • Step 5
    Debone chicken and cut sausage into 1/2 inch cubes.
  • Step 6
    Fry sausage and ham in dutch oven until lightly browned.
  • Step 7
    Remove meat from pot and add butter.
  • Step 8
    Saute 1 chopped onion, pepper and 1/2 cup chopped parsley until tender.
  • Step 9
    Add chicken, sausage and ham to vegetables.
  • Step 10
    Stir in 2 minced garlic cloves, tomato paste, bay leaf, thyme, salt pepper and hot sauce.
  • Step 11
    Add cooked rice and mix thoroughly.
  • Step 12
    Simmer over low heat for 10 minutes.
  • Step 13
    Stir frequently and remove bay leaf and toss in 1/4 cup chopped parsley and 1/4 cup chopped green onion tops. add shrimp and simmer until pink about 5-7 minutes.
