Ingredients
- 1 small chicken, broiler-fryer
- 1 - celery bunch, sliced
- 2 cups long grain rice, uncooked
- 1 pound ham, cubed
- 1 cup chopped onion
- 3/4 cup chopped parsley
- 1 large bay leaf
- 2 teaspoons salt
- 1/4 teaspoon hot sauce
- 3 - garlic cloves
- 1 pound smoked sausage
- 4 tablespoons butter
- 1 cup chopped green bell pepper
- 6 ounces tomato paste
- 1/4 teaspoon thyme
- 1/2 teaspoon pepper
- 1/4 cup chopped green onion
- 2 large onions
- 5 cups chicken broth
- 1 pound large shrimp,peeled and de-veined
How To Make chicken and sausage jambalaya

Step 1Put chicken, 1 onion (cut in half), celery and 1 garlic clove in pot.

Step 2Cover with water.

Step 3Cook for approximately 1 hour or until chicken is tender.

Step 4Cook 2 cups of rice in 5 cups chicken broth (20 to 25 minutes or until liquid is absorbed).

Step 5Debone chicken and cut sausage into 1/2 inch cubes.

Step 6Fry sausage and ham in dutch oven until lightly browned.

Step 7Remove meat from pot and add butter.

Step 8Saute 1 chopped onion, pepper and 1/2 cup chopped parsley until tender.

Step 9Add chicken, sausage and ham to vegetables.

Step 10Stir in 2 minced garlic cloves, tomato paste, bay leaf, thyme, salt pepper and hot sauce.

Step 11Add cooked rice and mix thoroughly.

Step 12Simmer over low heat for 10 minutes.

Step 13Stir frequently and remove bay leaf and toss in 1/4 cup chopped parsley and 1/4 cup chopped green onion tops. add shrimp and simmer until pink about 5-7 minutes.
