Ingredients

  • 1/3 cup flour
  • 1/3 cup cooking oil
  • 3 cups water
  • 12 ounces smoked sausage, in 1/2" slices
  • 2 cups cooked chicken, diced
  • 2 cups okra, sliced, fresh, frozen
  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped celery
  • 4 - minced garlic cloves
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper
  • - hot cooked rice

How To Make chicken and sausage gumbo (crockpot)

  • Step 1
    For roux, in a heavy 2 quart saucepan stir together flour and oil until smooth.
  • Step 2
    Cook over medium-high heat 5 minutes, stirring constantly.
  • Step 3
    Reduce heat to medium.
  • Step 4
    Cook and stir constantly about 15 minutes more or until a dark, reddish brown roux forms. Cool.
  • Step 5
    In a 3 1/2, 4, 5, or 6 quart slow cooker place water.
  • Step 6
    Stir in roux.
  • Step 7
    Add sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper and red pepper.
  • Step 8
    Cover; cook on low-heat setting for 10-12 hours or on high-heat setting for 4 1/2 to 5 hours.
  • Step 9
    Skim off fat.
  • Step 10
    Serve over rice.
