Ingredients
- 1/3 cup flour
- 1/3 cup cooking oil
- 3 cups water
- 12 ounces smoked sausage, in 1/2" slices
- 2 cups cooked chicken, diced
- 2 cups okra, sliced, fresh, frozen
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped celery
- 4 - minced garlic cloves
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon red pepper
- - hot cooked rice
How To Make chicken and sausage gumbo (crockpot)

Step 1For roux, in a heavy 2 quart saucepan stir together flour and oil until smooth.

Step 2Cook over medium-high heat 5 minutes, stirring constantly.

Step 3Reduce heat to medium.

Step 4Cook and stir constantly about 15 minutes more or until a dark, reddish brown roux forms. Cool.

Step 5In a 3 1/2, 4, 5, or 6 quart slow cooker place water.

Step 6Stir in roux.

Step 7Add sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper and red pepper.

Step 8Cover; cook on low-heat setting for 10-12 hours or on high-heat setting for 4 1/2 to 5 hours.

Step 9Skim off fat.

Step 10Serve over rice.
