    cooking oil
  • 3 c
  • 12 oz
    smoked sausage, in 1/2" slices
  • 2 c
    cooked chicken, diced
  • 2 c
    okra, sliced, fresh, frozen
  • 1 c
    chopped onion
  • 1/2 c
    chopped green bell pepper
  • 1/2 c
    chopped celery
  • 4
    minced garlic cloves
  • 1 tsp
  • 1/2 tsp
  • 1/4 tsp
    red pepper
  • ·
    hot cooked rice

How to Make Chicken And Sausage Gumbo (Crockpot)


  1. For roux, in a heavy 2 quart saucepan stir together flour and oil until smooth.
  2. Cook over medium-high heat 5 minutes, stirring constantly.
  3. Reduce heat to medium.
  4. Cook and stir constantly about 15 minutes more or until a dark, reddish brown roux forms. Cool.
  5. In a 3 1/2, 4, 5, or 6 quart slow cooker place water.
  6. Stir in roux.
  7. Add sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper and red pepper.
  8. Cover; cook on low-heat setting for 10-12 hours or on high-heat setting for 4 1/2 to 5 hours.
  9. Skim off fat.
  10. Serve over rice.
