Chicken and Rice Bake
1 lbboneless skinless chicken, any cut -or- 1.5 to 2 pounds bone-in chicken, any cut
1/2 to 3/4 stickbutter or margarine
2 cwhite rice, uncooked
4 cwater or chicken broth
1 pkgonion soup mix
·salt and pepper to taste
How to Make Chicken and Rice Bake
- Preheat oven to 400 degrees. Melt 1/2 to 3/4 stick butter in 13"x9" baking dish.
- Remove dish with melted butter from oven. Add rice, onion soup mix, water/broth, and stir enough to even out ingredients. *More water or less rice may be used for rice to cook thorougly* Add chicken on top (sometimes I like to dice chicken). Cover with aluminum foil.
- Bake for 1 hour. Time may vary depending on how large pieces of chicken are.
