This is a good and easy dish.It can be baked in the oven or on top of the stove on a very low flame. I prefer thighs but if you like other chicken parts,feel free. Annato is a spice and food coloring that makes the rice yellow.I buy a small flat can at the Hispanic market and it lasts forever,just use a small amount until you get the color you want the rice to be.

Ingredients

  • - oil
  • - salt and pepper
  • - garlic powder
  • - paprika
  • - chicken thighs
  • - onion,chopped
  • - red bell pepper
  • - fresh garlic,minced
  • - long grain rice
  • - chicken broth
  • - annnato spice or sazon
  • - parsley,chopped

How To Make chicken and rice

  • Step 1
    Heat oil in skillet. Season chicken with salt,pepper,garlic powder and paprika on both sides. Brown chicken in hot oil. Remove from skillet,add onion and bell pepper,stir and cook just until soft. Add garlic and rice,lightly toast rice in oil. Add broth and annato stir to combine,add chicken,lower heat and cook until rice and chicken are done. sprinkle parsley just before serving.
