Ingredients

  • 2/3 pound potatoes, cut into 1/2" cubes
  • 2 - green onions, sliced
  • 2 - chicken breasts, boneless and skinless
  • - salt and pepper
  • 1 - minced garlic clove
  • 2 teaspoons Dijon mustard
  • 1 teaspoon fresh tarragon, finely chopped
  • 1/3 cup dry white wine

How To Make chicken and potatoes francais

  • Step 1
    Place potatoes in shallow 1-quart microwave-safe dish.
  • Step 2
    Cover with plastic wrap, venting one corner.
  • Step 3
    Microwave on high 3 minutes.
  • Step 4
    Coat large nonstick skillet with vegetable cooking spray.
  • Step 5
    Add potatoes and onions; push to one side and add chicken.
  • Step 6
    Cook over medium heat, tossing potatoes occasionally and turning chicken once until potatoes are tender and juices run clear when chicken is pierced, about 15 minutes.
  • Step 7
    Season with salt and pepper.
  • Step 8
    Remove chicken and potatoes to platter; keep hot.
  • Step 9
    Add garlic to skillet; mix in mustard, tarragon and wine; cook over high heat 1 minute.
  • Step 10
    Remove from heat; whisk in sour cream.
  • Step 11
    Season with salt and pepper.
  • Step 12
    Pour sauce over chicken.
