A great spin on traditional chicken and waffles recipe. We loved the savory potato waffles. They are unique and delicious! The brine really tenderizes and adds great flavor to the fried chicken. We opted for beer in the brine, but next time we want to try with the ginger ale for added sweetness. We topped off our chicken and waffles with some maple syrup ... yummy.

Ingredients
- 6 - boneless chicken thighs or wings
- 1 c - apple cider vinegar
- 1 bottle - ginger ale or beer your choice
- 1/2 c - brown sugar, lightly packed
- 1/2 c - smoked or regular salt
- - water to cover
- Heavy Dash - onion powder
- Heavy Dash - garlic powder
- Heavy - black pepper
- POTATO WAFFLES
- 2 c - mashed potatoes
- 1 c - self-rising flour
- 1 - egg
- 3/4 c - milk
- 2 - green onions, chopped tops and bottoms
- SEASON FLOUR FOR CHICKEN
- 2 c - all-purpose flour
- 1/2 c - cornmeal
- Dash - smoke salt
- Heavy dash - black pepper
- Dash - onion powder
- Dash - garlic powder
How To Make chicken and potato waffles

Step 1Mix all ingredients for chicken together and place chicken in brine for at least 2 hours.

Step 2Mix season flour ingredients together in a bag and drop chicken pieces in. Shake and let sit while oil is heating up.

Step 3Heat oil in cast iron skillet to 350 and fry chicken 5-6 min per side till golden brown; set on wire rack to drain.

Step 4Mix all ingredients for waffles together and drop on waffle iron with ice cream scoop; cook until browned.

Step 5Serve with gravy made from chicken drippings.
