Ingredients

  • 1
    onion, chopped
  • 1 c
    mushrooms, sliced
  • 1 c
    zucchini
  • 1/2 c
    celery
  • 1 c
    garlic clove, minced
  • 3 Tbsp
    butter
  • 1 c
    tomatoes, canned whole and drained
  • 1 tsp
    dried basil
  • 1/2 tsp
    salt
  • 1/4 tsp
    red pepper
  • 8 oz
    macaroni, dry
  • 3 c
    chicken, cooked and chopped
  • 1.5 c
    whipping cream
  • 2 c
    monterey jack cheese, shredded
  • 1/2 c
    parmesan cheese, grated

How to Make Chicken and Pasta Bake

Step-by-Step

  1. Saute first 5 ingredients in butter until vegetables are crisp-tender.
  2. Stir in tomatoes, basil, salt and crushed red pepper; set aside.
  3. Cook pasta according to package directions; drain.
  4. Combine pasta, vegetable mixture and chicken in a large bowl; spoon mixture into an 11x7x1-1/2-inch baking dish.
  5. Combine whipping cream and cheeses in a medium saucepan; cook over low heat until cheese melts, stirring frequently.
  6. Pour sauce over pasta mixture. Bake, covered, at 350 for 40 to 45 minutes or until thoroughly heated.
