Ingredients
- 4 - chicken thighs
- - salt and pepper
- 3 tablespoons olive oil
- 8 ounces mushrooms cut into pieces
- 2 small shallots diced
- 4 cloves garlic minced
- 5 tablespoons flour
- 2 cans coca cola
- 1 cup chicken stock
- 1 - bay leaf
- - fresh parsley chopped
How To Make chicken and mushrooms in a coca-cola sauce

Step 1Pat the chicken dry and season with salt and pepper. Place a large skillet on stove over medium high heat. Add the oil. Place the chicken in pan and cook until golden on one side then turn and cook until golden on other side. Remove from pan and set aside.

Step 2Add the mushrooms and onions to the pan. Saute until they are softened. Add the garlic. Saute one minute. Whisk in the flour and then add the coke and chicken stock. Whisk until smooth. Add the bay leaf.

Step 3Place the chicken back in the pan and turn heat to medium low and simmer for 25 to 30 minutes until chicken are no longer pink.

Step 4Serve over noodles, pasta or rice and top with parsley.
