chicken and mushroom with orzo
We took the components several other favorite recipes and pulled them together to make this dish which turned out be a delicious soup/stew. It would be a bit of a time saver to use rotisserie chicken and premade chicken stock. We enjoy this all year long but it is especially comforting on a cold winter day. Broccoli has always been our go-to for the green veg, but last time I made it with fresh asparagus and that was really yummy !

Ingredients
- 2 tablespoons butter
- 2 boneless, skinless chicken thighs
- 4 ounces fresh mushrooms cut into quarters or half
- 1/2 cup onion - chopped into large pieces
- 3/4 teaspoon minced garlic
- 2 tablespoons all purpose flour
- 2 cups hot water
- 2 teaspoons better than bullion roast chicken flavor
- 1/2 cup orzo pasta - uncooked
- 1 cup steamed broccoli or other green veg
- 1/2 cup sliced water chestnuts
- 1/4 - 1/2 cup additional chicken broth or milk
- snipped chives for garnish
How To Make chicken and mushroom with orzo

Step 1Stir together the hot water and Better Than Boullion until well combined then set aside. Melt the butter in a medium saucepan over medium high heat. Add the chicken pieces then stir and cook until the chicken is cooked through - about 4-5 minutes. Remove chicken to a plate and keep warm. Leave the drippings in the saucepan.

Step 2Add mushrooms and onion to the pot and cook, stirring occasionally, until tender - about 3-5 minutes. Remove and place with the chicken to keep warm.

Step 3Stir in garlic and cook until fragrant which should take less than a minute. Add the flour and whisk until slightly browned which should take about a minute. Whisk in the chicken broth and bring to a boil. Stir in orzo then reduce heat and simmer, stirring frequently, for 6-7 minutes or until it is done.

Step 4When the Orzo is done, stir in broccoli, chicken, mushrooms, onions and water chestnuts and heat through for about 4 minutes - stirring frequently. If the sauce is too thick, add some extra chicken broth or milk to thin it out. Ladle into bowls and serve hot garnished with snipped chives.
