Both of my parents and I were born and raised in Pasadena Ca,but we do have Southern roots. Both sets of grandparents were born in the South. Both Grandmothers and a Grandfather were awesome cooks, I don't ever remember my maternal Grandfather cooking,they were married 62 years ,so I guess he never had to cook! He did make onion sandwiches.(never tried them),I remember my Grandmother making chicken and dumplings in the summer when my sisters and brother would spend time with them. I don't remember how she made them but this is my version,guessing from memories.

Ingredients

  • ·
    whole chicken
  • ·
    1 onion,cut in half
  • ·
    celery,cut in chunks
  • ·
    2-3 carrots,sliced
  • ·
    3-4 cloves garlic,crushed
  • ·
    2-3 sprigs thyme,or 1 t.dried
  • ·
    handful of parsley
  • ·
    3-4 chicken bouillon cubes
  • ·
    black pepper
  • ·
    2 carrots,sliced
  • ·
    1 onion,chopped
  • ·
    2-3 garlic cloves,minced
  • ·
    2 c flour
  • ·
    1 t. salt
  • ·
    1/4 c shortening
  • ·
    1/4 c milk
  • ·
    2 sprigs parsley,chopped

How to Make Chicken and Dumplings

Step-by-Step

  1. Place chicken,onion,celery, carrots, garlic, thyme,parsley,bouillon cubes and pepper in a large pan. Cover with cold water. Simmer 1 hour or until chicken is tender. Drain,removed chicken,debone,skin and cut into large pieces. Set aside.
    Add carrots,onions and garlic to broth,simmer until carrots are tender. Taste for salt,may need a bit ,but bouillon cubes are salty.
    Combine flour and salt. Cut in shortening and add milk until a soft dough forms. Roll out on a lightly floured board,roll thin,cut into strips,drop the strips into the simmering broth ,simmer 10 mins. uncovered. Add chicken pieces, cover and heat 5 mins. Sprinkle with parsley.
