A down-home Texas recipe, snipped long ago from an old community cookbook.

Ingredients

  • 1 chicken, cooked and deboned (save broth)
  • 2 cups flour
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 1/2 - 1 cups ice water
  • 2 cups chicken broth
  • 2 cups milk
  • 1/2 cup unsalted butter
  • salt & pepper, to taste

How To Make chicken and dumplings

  • Step 1
    Blend flour, salt and shortening until mixture resembles corn meal. Slowly add ice water until it makes a dough.
  • Step 2
    Roll dough thinly on a floured surface and cut into strips.
  • Step 3
    In a Dutch oven, add the broth and milk. Add the butter. Salt and pepper to taste. Bring to a slow boil, then lower heat and simmer.
  • Step 4
    Add one strip at a time to the simmering liquid. DO NOT STIR! Simply push the strip down into the liquid with a spoon.
  • Step 5
    Cook for 15 minutes, then carefully and gently add the meat.
