chicken and dumplings!

This is a recipe handed down through the women in my family from great grandma to grandma etc.Growing up on a farm in South Dakota,everyone worked hard and this was a Sunday dinner that the menfolk loved.I have no picture of it but it was delicious!

Ingredients

  • 3 pounds large farm chicken
  • 2 cans chicken broth, low salt
  • 1 cup water to cover
  • 2 pinches ground onion
  • 5 large eggs
  • 1-2 cup all purpose flour

How To Make chicken and dumplings!

  • Step 1
    Cut up chicken parts and on to cook at medium heat with enough water and chicken broth to cover.Add onion bits or ground onion,with a dash of low salt according to taste.
  • Step 2
    Beat up eggs in a bowl until well beaten.Add flour to eggs and salt to tasteuntil mixture is stiff enough to drop by spoonful into chicken and broth mixture. When chicken is cooked,remove to platter and reduce heat to simmer.Drop the egg mixture into simmering broth to make dumplings.The dumplings swell as they cook.
  • Step 3
    You can boil potatoes to go with the chicken and dumplings.
  • Step 4
    After dumplings are removed from the broth,you can make a gravy for the potatoes from water and flour,mixed until no lumps are in the mixture.Add mixture to broth and stir until gravy is formed .Season to taste.Good supper meal for family!
