chicken and dumplings
My children grew up eating and loving this. I have used this recipe for forty years, and my grown children still ask for it! It is such a great comfort food.

Ingredients
- 2 pounds boneless, skinless chicken breast
- 2 cups self rising flour
- 1/3 cup shortening
- 3/4 cup boiling chicken broth
- 1 teaspoon onion powder
- 1/2 teaspoon pepper
- 1 1/2 teaspoons salt
How To Make chicken and dumplings

Step 1Rinse chicken, and place into large pot. Cover with water. Add salt, pepper and onion powder Bring to boil, and cook until very tender

Step 2Remove chicken, and cut into bite-sized pieces to cool quicker Place flour into large bowl, and add shortening Cut shortening in with fork, until mixed well Take 3/4 cup hot chicken broth, and mix into flour, forming a stiff dough

Step 3Add chicken back to broth on a low simmer Place dough on floured surface, and roll to 1/8 inch thickness Flour top of dough Cut into strips about 1 inch long and 3/4 inch wide

Step 4Placed floured dumplings in the slow simmering broth push down lightly, so all dumplings go under the broth for a second. Cover and cook, very lightly simmering for 8 minutes. Turn heat off, And allow to sit 15 minutes before serving.
