My children grew up eating and loving this. I have used this recipe for forty years, and my grown children still ask for it! It is such a great comfort food.

Ingredients

2 lb
boneless, skinless chicken breast
2 c
self rising flour
1/3 c
shortening
3/4 c
boiling chicken broth
1 tsp
onion powder
1/2 tsp
pepper
1 1/2 tsp
salt

How to Make Chicken and dumplings

Step-by-Step

  • 1Rinse chicken, and place into large pot.
    Cover with water.
    Add salt, pepper and onion powder
    Bring to boil, and cook until very tender
  • 2Remove chicken, and cut into bite-sized pieces to cool quicker
    Place flour into large bowl, and add shortening
    Cut shortening in with fork, until mixed well
    Take 3/4 cup hot chicken broth, and mix into flour, forming a stiff dough
  • 3Add chicken back to broth on a low simmer
    Place dough on floured surface, and roll to 1/8 inch thickness
    Flour top of dough
    Cut into strips about 1 inch long and 3/4 inch wide
  • 4Placed floured dumplings in the slow simmering broth
    push down lightly, so all dumplings go under the broth for a second.
    Cover and cook, very lightly simmering for 8 minutes.
    Turn heat off, And allow to sit 15 minutes before serving.
