Almost all the family love chicken and dumplings.I overheard my great grand kids, on the way home from church, saying, I hope memaw has chicken pie...oh no, I hope she has dumplings. Maybe she'll have both!!!

Ingredients

  • 2 tablespoons butter, cold
  • 21/4 cups self rising flour
  • 3 cans (14.5) chicken broth
  • 1/4 cup all veg shortening ( crisco)
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 2 cups cooked, diced chicken

How To Make chicken and dumplings

  • Step 1
    Melt butter in dutch oven. Whisk in 1/4 cup flour.stir, making a roux. Lower heat and add all milk, except 1/2 cup. Bring to a boil and remove from heat.
  • Step 2
    place 2 cups flour in a lg bowl. Cut in shortening with 2 knives, until size of peas. Stir in chicken broth and mix until dough leaves sides of bowl.
  • Step 3
    Turn dough onto a lightly floured surface. Knead a few times and roll out to about an 1/8 of an inch. Cut into strips,about 2 x1 inch.Return broth to a boil and add dumplings, one at a time.
  • Step 4
    Cover;reduce heat to low. Simmer 10 min, stir occasionaly. add pepper, milk and chicken. Cook about 5 more min.
