Ingredients
- 1 - whole hen
- - salt and pepper to taste
- 3 cups self rising flour
- 1 teaspoon salt
- 1 cup water
- 1 - egg
- 6 to 8 cups chicken broth
How To Make chicken and dumplings
-
Step 1In a large pot boil the hen in water for 2 hours.Add about 8 cup water. Add additional water as needed. Drain hen reserving the broth. While boiling the hen i like to skim the fat that rises to surface. Remove hen, cool and cut hen into pieces.
-
Step 2For the dumplings....in a large bowl, sift together the flour and salt. Gradually add the water. Stir in egg. Knead the dough throughly and roll out onto a floured surface. Cut the dough into strips about 1 1/2 inch strip and drop in boiling chicken broth. Cover and simmer about 5 to 10 minutes.

Step 3Add more salt and pepper to taste.
