My daughter, Drenda Lyn, (DeDe) for short, sent this recipe, bragging on how good it tastes. Dont know where she got recipe, but she was right. Very,very good. For her to brag about it, I thought, WOW !! it must be good. It takes very little prep work, such as chopping, growing the onions, green peas, raising the chicken, JUST KIDDING!! This has your meat, veggies, gravy and bread. Add a salad and you have it made. Hope you like!!!

Ingredients

  • 1/2 - cup chopped, sweet onion
  • 1/2 - cup chopped celery
  • 1/4 - cup butter
  • 2 - garlic cloves. minced
  • 2 tsp - sugar
  • 1/2 - cup all purpose flour
  • 1 tsp - each, salt & dried basil
  • 1/2 tsp - pepper
  • 4 cups - chicken broth
  • 1 pkg - (10 oz) frozen green peas
  • 4 cups - cooked cubed chicken

How To Make chicken and dumpling casserole

  • Step 1
    DUMPLINGS: 2 cups bisquick baking mix 2 tsp dried basil 2/3 cup milk or half & half
  • Step 2
    Saute onion, celery & garlic in butter till tender. Add flour, sugar, salt, basil, pepper & broth, bring to boil. Cook & stir one minute, reduce heat. Add peas, cook 5 minutes, stirring constantly. Stir in chicken. Pour into baking dish.
  • Step 3
    Combine bisquick & basil, stir in milk with a fork until moistened.
  • Step 4
    Drop by tbs onto casserole mixture. Bake, uncovered at 350 for 30 minutes. Cover & bake 10 minutes more or until heated through and dumplings are done and lightly browned.
