Ingredients

  • 2 c
    cooked chicken
  • 2 c
    cooked jasmine rice
  • 1/2 c
    green beans
  • 1/2 c
    corn
  • 1/2
    bell pepper chopped
  • 1/2 tsp
    tones garlic and rosemary spice
  • 2 Tbsp
    bacon drippings
  • 1 Tbsp
    butter
  • 3 Tbsp
    flour
  • 2 c
    chicken broth
  • 1 tsp
    each: onion powder, garlic powder, basil leaves
  • 1/2 tsp
    oregano
  • 1/2 tsp
    smoked paprika
  • 1/4 tsp
    celery salt
  • 1/8 tsp
    cayenne pepper
  • 1 c
    mozzarella cheese shredded
  • 1/2 c
    sour cream
  • ·
    saltines and butter melted.

How to Make Chicken and Cheesy Rice Casserole

Step-by-Step

  1. In a large bowl combine the first 6 ingredients.
    Preheat oven 350 F
  2. In a saucepan over medium high heat bacon drippings and butter. Add flour and cook for a minute or two.
  3. Slowly stir in chicken broth, stirring constantly. Add onion, garlic, basil,oregano, paprika, celery saltine cayenne pepper. Cook,stirring constantly for 2-3 minutes. Taste Add more spices to your liking.
  4. Set off of heat,and stir in mozzarella until melted. Stir in sour cream.
  5. Stir sauce in to the chicken mixture. Pour into a casserole dish sprayed with pam.
    Top with crushed saltines and melted butter.
    Bake for 30 minutes or until bubbly.
