chicken and calamari rice bowl
I had some frozen calamari that I needed to find something to do with it and I remembered when we use to have a Mongolian BBQ restaurant in town I loved to go there and get a stir fry rice bowl with chicken, calamari, veggies, and peanuts so I came up with this it was delicious.

Ingredients
- 3 - boneless skinless chicken thighs cut into 1 inch pieces
- 3 ounces calamari chopped into pieces
- 3 cloves garlic minced
- 1 - inch piece of ginger minced
- 1 tablespoon chinese 5 spice
- 1 teaspoon each onion powder, thyme, and white pepper
- bunch bok choy core discarded chopped white and green parts separated
- 4 - scallions minced separate white and green parts
- 1 1/2 cups leftover cooked white rice
- 1 cup crushed peanuts
- 1/2 cup cilantro chopped
- 1 1/2 cups asian stir fry sauce i use my own recipe that is on jap but you could buy a botted brand
How To Make chicken and calamari rice bowl

Step 1Place some oil in a hot pan or wok. Add chicken and cook until browned on outside.

Step 2Add white parts of bok choy cook a couple of minutes.

Step 3Mix the spices together and add to chicken in pan.

Step 4Add garlic and ginger stir.

Step 5Add the green leaves of the bok choy with the white parts of the scallions.

Step 6Add the rice

Step 7Stir in the stir fry sauce cook until warmed through

Step 8Add the calamari and cook for 1 minute then remove from heat you do not want to over cook the calamari

Step 9Stir in the peanuts

Step 10Lastly garnish with the cilantro and green parts of the scallion.
