Love this recipe because you can easily make it serve more if needed without a lot of trouble. Great for company or to share with someone just home from the hospital.

boneless chicken breasts
1 c
brown rice, raw
2 1/2 c
hot water
1 pkg
dry onion soup mix
few pats of margarine

How to Make Chicken and Brown Rice Casserole


  • 1Pour rice into 13 x 9 dish. Lay chicken breasts on top of rice. Pour dry onion soup mix over chicken. Add few pats of margarine. Pour hot water over all. Cover with aluminum foil.
  • 2Bake at 325 degrees for 1 1/2 hours or until most of liquid is absorbed.
  • 3Note: I use chicken tenderloin pieces instead of thick chicken breasts so it doesn't have to cook as long; usually about 45 min to 1 hour.
