Ingredients
- 4 large chicken breasts, boneless, skinless and cubed
- 12 bay leaves
- MARINADE INGREDIENTS
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 1 large garlic clove, crushed
- 4 tablespoons olive oil
- salt and pepper to taste
- SALSA INGREDIENTS
- 1 tablespoon white wine vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon sugar
- salt and pepper to taste
- 3 chopped scallions
- 1 pound tomatoes, cored, seeded and cubed
- 20 basil leaves
How To Make chicken and bay with tomato and basil salsa

Step 1In a bowl, combine the marinade ingredients.

Step 2Add the cubed chicken, stir to coat well and cover with cling film.

Step 3Leave to marinate in the fridge for at least 6 hours or up to 24.

Step 4Thread the marinated chicken on to 6 skewers, inserting two bay leaves on each, and barbecue or grill until cooked through.

Step 5Meanwhile, to make the salsa, combine the vinegar, olive oil and sugar in a bowl and season to taste.

Step 6Add the chopped spring onions and tomatoes and toss well to combine.

Step 7Stir in the basil leaves at the very last moment and then serve with the kebabs.
