I got this recipe in an old high school cookbook when I was taking home-ec as a teenager. Yeah, I've been making it that long, lol... It is a tried and true recipe. Great served over warm biscuits.

Ingredients
- 1/4 cup canola oil or your preference of oils
- 2 cups stewed chicken, cut-up
- 1/3 cup flour
- 1 cup milk
- 1/2 teaspoon salt
- 1 tablespoon green pepper, diced
- 1-1/2 cup chicken broth
- 1 tablespoon pimentos
- 2 tablespoons almonds, chopped
- 1 large beaten egg
- 1/8 teaspoon black pepper, optional
How To Make chicken ala' king

Step 1Heat oil in skillet, add green pepper and flour. Stir and cook until mixture is light brown in color. Stir in chicken broth, milk and seasonings. Cook as for white sauce, stirring constantly. Add stewed chicken, pimentos and chopped parsley. Add beaten egg to this mixture and mix well. Cook until thickened, stirring constantly to be sure it doesn't burn.

Step 2Serve on warm biscuits or dinner rolls. Serves 4.
