Ingredients
- 4 - chicken breast, bone in (or chicken thighs-6)
- 2 large green bell peppers-or 1 red, 1 green, sliced
- 2 large onions, vidalia, peeled, and sliced
- 1 cup sliced mushrooms-i like crimini
- 2 jars spagetti sauce-or your own pasta sauce
- 2 teaspoons oregano, dried
- 2 teaspoons basil, dried
- 1 teaspoon fresh chopped parsley-to top when done
- 1/2 cup olive oil
- 3 cloves garlic-peeled and sliced
How To Make chicken ala cacciatori

Step 1Fry chicken in a large, deep, fry pan with a little olive oil (1/2 cup), over medium heat until browned on both sides. Add the remaining ingredients, except the sauce and fresh parsley. Allow the chicken to cook in the peppers, onions, garlic, and mushrooms until softened.

Step 2Add the sauce and cook, covered, at low heat until the chicken falls off the bone.

Step 3I serve this with creamy polenta or gemeli pasta. Sprinkle with chopped parsley.
