This is my own take on a family recipe. I never "knew" the recipe, just what was in it, so I learned to make a family winner through trial and error over the years. Thank goodness the family loves it! Pictures will be added later!

Ingredients

  • 1 cup soy sauce
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 3 - bay leaves
  • 2 tablespoons minced garlic
  • - garlic salt to taste
  • - pepper to taste
  • 3 tablespoons cooking oil
  • 1 package chicken, drumsticks or thighs (or pork)

How To Make chicken adobo

  • Step 1
    Mix first 7 ingredients and 1 Tbsp. oil in large mixing bowl. Rinse chicken and place in bowl and marinate for 1-2 hours. [Best when marinated overnight.]
  • Step 2
    Add 1-2 Tbsp. cooking oil to large frying pan and heat over medium-high heat. Brown chicken on each side for 3-4 minutes and set aside.
  • Step 3
    Using same pan, return chicken pieces and pour marinade mixture over the chicken, adding water to cover. Cook for 1 1/2 hours over medium-high heat, stirring often.
