Ingredients
- 4 bone in chicken thighs
- 1 tablespoon oil
- 1 cup coconut milk
- 1/2 cup soy sauce
- 1/3 cup white vinegar
- 1 tablespoon sugar
- 2 bay leaves
- 6 cloves garlic minced
- 1 red chili chopped
- 3 tablespoons cilantro chopped
How To Make chicken adobo

Step 1Add oil to large dutch oven. Brown the chicken on both sides. Add in the coconut milk, soy sauce, vinegar, sugar, bay leaves, garlic and chili. Bring to boil. Reduce heat to a low simmer. Cover the pan and allow to simmer 1 hour.

Step 2In the last 10 minutes uncover and crank up the heat to thicken and reduce the sauce. Serve over rice or noodles if desired and garnish with cilantro
