Wanted something tasty but simple for dinner as I wasn't feeling well and didn't want to slave away in my kitchen. Hadn't made this in ages, but decided to try it in the slow cooker, it turned out amazing.

It's also good with pork.

Slow Cooker Crock Pot

Ingredients

Add to Grocery List

2-3 lb
chicken, i use boneless skinless breasts
1 medium
onion, cut into wedges
3 clove
garlic, minced
1/4 - 1/2 tsp
ground ginger
1/2 - 1 tsp
ground black pepper
1/2 c
vinegar, i used white
1/2 c
soy sauce
2
bay leaves
1 c
water

How to Make chicken adobo

Step-by-Step

  • 1Sprinkle chicken with ginger and pepper. Rub lightly and place in bottom of slow cooker. Add garlic and onion followed by the bay leaves and the wet ingredients.
  • 2Cook on low for 8 hours or on high for about 5.
  • 3*optional*
    Serve with rice, use chicken broth and cooking stock to cook the rice in.

    For thicker sauce to drizzle over chicken, add about 1.5 T cornstarch mixed with a little water about an hour before serving.
