Wanted something tasty but simple for dinner as I wasn't feeling well and didn't want to slave away in my kitchen. Hadn't made this in ages, but decided to try it in the slow cooker, it turned out amazing. It's also good with pork.

Ingredients For crock pot chicken adobo

  • 2-3 lb
    chicken, i use boneless skinless breasts and thighs
  • 1 md
    onion, cut into wedges
  • 3 clove
    garlic, minced
  • 2 tsp
    fresh minced ginger or
  • ¼-½ tsp
    ground ginger
  • 1/2 - 1 tsp
    ground black pepper
  • 1/2 c
    white vinegar
  • 1/2 c
    soy sauce
  • 2
    bay leaves
  • 1 c
    water

How To Make crock pot chicken adobo

    Sprinkle chicken with ginger and pepper. Rub lightly and place in bottom of slow cooker. Add garlic and onion followed by the bay leaves and the wet ingredients.

    Cook on low for 8 hours or on high for about 5. Serve with rice and roasted veggies.

    For thicker sauce to serve with chicken, add about 1.5 TBSP cornstarch mixed with a little water about an hour before serving.

    •Reduce water to 6oz •Cook on high pressure for 10 minutes (11 if frozen) •Quick release pressure

    If using cornstarch to thicken, add after quick release and set IP to low saute. Simmer until thickened.
