Ingredients
- 5 pounds chicken thighs and legs
- 6 - cloves of garlic chopped finely
- 1 tablespoon ginger paste
- 4 - fresh or 2 dried bay leaves
- 1 tablespoon crushed red pepper flakes
- 4-6 - whole peppercorns
- 1 cup soy sauce, dark
- 1 cup red wine vinegar
- 2 cups chicken broth
- 1 - sliced yellow onion
How To Make chicken adobo

Step 1combine first 7 ingredients and mix well. Pour over chicken. Cover and marinate 3 hours to over night.

Step 2Heat 2 tbls vegetable oil in deep sided pan or dutch oven. Brown chicken in batches on all sides. Remove to plate and set side. Add sliced whole yellow onion to pan and saute until tender.

Step 3Add chicken back to pan and add leftover marinade and 2 cups of chicken broth to pan bring to boil. Reduce heat and simmer up 30-45 minutes until chicken is tender and cooked through. Serve over rice.
