5 lbchicken thighs and legs
6cloves of garlic chopped finely
1 Tbspginger paste
4fresh or 2 dried bay leaves
1 Tbspcrushed red pepper flakes
1 csoy sauce, dark
1 cred wine vinegar
2 cchicken broth
1sliced yellow onion
How to Make Chicken Adobo
- combine first 7 ingredients and mix well. Pour over chicken. Cover and marinate 3 hours to over night.
- Heat 2 tbls vegetable oil in deep sided pan or dutch oven. Brown chicken in batches on all sides. Remove to plate and set side. Add sliced whole yellow onion to pan and saute until tender.
- Add chicken back to pan and add leftover marinade and 2 cups of chicken broth to pan bring to boil. Reduce heat and simmer up 30-45 minutes until chicken is tender and cooked through. Serve over rice.
